Sweet Potato & Cinnamon

One of my favorite foods - as a side dish, but more so as a snack - is the brightly orange colored (signaling nutritious) Sweet Potato. And of course, always sprinkled with my favorite sweet spice, Cinnamon!

As part of my weekly food prep, I cook (or microwave for 4 minutes) a couple of sweet potatoes, slice into chunks and sprinkle with cinnamon, then let cool. Place in a plastic bag or container and refrigerate for easy on the go snacking, adding to smoothies and as a side dish as seen in many of my photos and recipes. Yes, it is very good cold!
