Avocado Egg

 

 

Ingredients

1 Avocado

2 Eggs

Preferred Spices (I used Pepper, Cayenne Pepper & Turmeric)

Optional Toppings - Goat Cheese, Chopped Veggies, Bacon, Salmon. Experiment with what you like with your eggs!

Preheat oven to 425 degrees.

Avocado in half, twisting out the seed. Place avocado halves on baking sheet. Slice small sliver on "rounded avocado skin" so avocado can lay flat without tipping over. Sprinkle avocado with spices. Crack egg in the "hole" (scooped out part) of the avocado.

If desired, top with cheese or other preferred toppings.

Bake for 15-20 minutes until eggs are done.  Enjoy with a side of fresh fruit or on its own! I added another egg yoke to the muffin tin that I baked the avocado eggs in for an extra side of egg/protein, as shown.
