Chicken Beet Orange Salad

Fresh Organic Spinach Leaves - 2-3 Handful Per Person

Precooked Frozen Chicken Strips (I use Trader Joe's)

Mandarin Oranges - handful or so per person

1/4 - 1/2 Avocado - cut into chunks

Beets - cut into small chunks (I use Trader Joe's refrigerated, fresh brand)

Goat Cheese - Few Sprinkles or Small Handful

Cayenne Red Pepper

Coconut Oil

EVOO (Extra Virgin Olive Oil) and Balsamic Vinegar

Sauté pre-cooked, frozen chicken (or use fresh chicken) in Coconut Oil over medium heat until warmed and sprinkle with Red Cayenne Pepper. Add Chicken to Spinach along with remaining ingredients. ENJOY!

This is a great option for  Clean & Healthy and Delicious Dinner or Lunch and can be made in literally 5 minutes thanks to the pre-cooked frozen chicken breast strips which I recommend always having on hand as a time saver and basic staple.
