Vegan Sausage Hash

INGRDIENTS:

Quinoa - Half Cup or So Cooked (may use more per liking)

Brussels Sprouts - Sliced and Shredded

Red Peppers - chopped into chunks

Zucchini - cut into shunks

Vegan Sausage (or can use meat sausage)

Pumpkin Seeds (I used Raw) - Handful

Olive Oil - Drizzle

Spices: Nutritional Yeast, Turmeric and Smoked Paprika - A Few Dashes of Each

Yesterday afternoon, after a TRX workout with my dear friend Dee who was visiting from Kentucky, I whipped up this lunch for us in less than 10 minutes with the pre-cooked Quinoa and pre-cut veggies I already had in the fridge along with the Vegan Sausage that I simply sliced into chunks and sautéed on medium heat in Olive Oil, along with the veggies for about 5-6 minutes. Once sausage was browned and cooked, I topped with the spices.

I call this DEElicious Vegan Sausage Hash after my friend Dee who said it was absolutely delicious - and this is coming from a red meat eater! If you are starting from scratch and don't already have the prepped pre-cut veggies or pre-cooked Quinoa, then simply prepare the Quinoa according to package directions, chop up your veggies and sautee veggies with sausage on medium heat for 5-6 minutes until sausage is browned and thoroughly cooked. Set aside and once quinoa is cooked, combine all in a bowl, top with spices and ENJOY!
