Greens Energy Shake - Kale & Greek Yogurt

   Ingredients:

1 Cup Coconut Milk (I used organic unsweetened)

3/4 C or So of Plain Greek Yogurt

1-2 Handfuls Kale - torn pieces

1 Kiwi - (scoop out center)

1/2 Pear

2 Pitted Dates

Handful Sliced Cucumber

2 Slices of Precooked Sweet Potatoes (or 1/4 Sweet Potato)

Few Dashes of Cinnamon

Few Dashes of Pumpkin Pie Spice (Optional)

Combine all ingredients in a Blender or Vitamix and blend until smooth.

This delicious smoothie is packed with goodness - protein, calcium and probiotics from the Greek Yogurt, Vitamins A, B, C, D & K, as well as folate from the Kale, Cucumber, Kiwi and Pear, Fiber and Potassium from the Dates and Sweet Potatoes.  Quick and easy breakfast to kick off your day and help keep you energized and can also be a yummy, filling snack.
