Harvest Dinner

Fresh Brussels Sprouts

Sweet Bell Peppers (I like and use Red, Yellow & Orange) 1-2 Large or Each or Mini 5-6 of each

1 Ripe Pear (I used Bartlett)

Couple Handfuls of Walnuts

Goat Cheese - Optional (or Feta if preferred)

EVOO (Extra Virgin Olive Oil)

Cayenne Red Pepper (or if too spicy for you, add Pepper or Lemon Pepper) - sprinkle on veggies

Cinnamon - sprinkle on chopped pear

*May add a Protein - Chicken, Lean Meat or Seafood

Preheat Oven to 400 degrees. Chop Veggies, Walnuts and Pear into chunks and drizzle with EVOO and sprinkle spices.  Roast or Bake for 20-25 minutes. Top with Goat Cheese and Serve Warm.

*Another Option and Cooking Method if in a time crunch is to sauté all ingredients as indicated above in a skillet with 2 TSP of EVOO - cook on Medium Heat for 5-10 Minutes.
