Sweet Potato w/Cinnamon

One of my favorite snacks as well as healthy foods in general is the good ole' Sweet Potato.

When I'm doing my weekly food prep on Sundays, one of the rituals, along with boiling a dozen eggs and chopping up the week's veggies, is to cook a couple of Sweet Potatoes for snacking & adding to lunches, Smoothies and Breakfast throughout the week.

               It's as easy as 1-2-3

1. Simple bake or microwave (4 minutes on high) a Sweet Potato, then let cool.

2. Once cooled, slice and sprinkle with Cinnamon for added flavor and anti-oxidants & anti-inflammatory benefits.

3. Put in zip lock bag or container and refrigerate.

It's that quick and easy! I've given samples to my clients who had never tried a cold sweet potato with cinnamon and every single person who has tried it has been surprised by how much they like this sweet, filling combination.

Health Benefits: Just a few of the health benefits are the high levels of Beta Carotene and Vitamin A, as well as fiber and "good carbs".

As I've posted before, a great protein-carb combo to snack on or eat at breakfast or lunch is Sweet Potato and Hard Boiled Egg - both can be prepared in advance for on the go and ready to eat snacking.

Another fun way I like to use Sweet Potatoes is to add to my smoothies for a dose of healthy carbs, Vitamin A, Beta Carotene, fiber ad added creaminess to my Protein Smoothies.

If you crave carbs - sweet potatoes are a healthier option than white potatoes - remember, the brighter the color, the better the health benefits!
