Super Easy Directions and All Natural Ingredients:
1-3 Handfuls Chopped Broccoli
Handful Red Bell Peppers
Vegan Meatballs (or can use turkey or beef if eating meat)
Organic Red Lentil Penne (I found Tolerant Brand at Kroger Health Food Isle) - make per package directions, which is boil water then add Red Lentils Penne and set aside, stirring occasionally, until cooked, about 8 minutes
Extra Virgin Olive Oil
Cayenne Red Pepper
Roasted Garlic & Herb Spice
Directions: Cook Lentil Penne according to directions. Meanwhile heat meatballs and sautee (or microwave or roast) broccoli and red bell peppers in pan with olive oil and spices. Once cooked, mix all ingredients in bowl, top with Nutritional Yeast and a drizzle of Olive Oil and Enjoy! Prep Time about 2 minutes, cook time 8 minutes, done and ready in 10 minutes!
*Serves 2. Double or Triple Recipe to serve more than 2. I always double to have leftovers.
