Spag & Meatballs

I hesitated on what to title this recipe as we don't want to be afraid of carbs - Good Carbs that is, not White Starchy Carbs like traditional spaghetti noodles, that make us sick, tired, bloated and overweight when consumed in excess. So, here is one of my favorite ways to enjoy and cook spaghetti, using Spaghetti Squash.

1 Spaghetti Squash (found in the produce department)

1 Jar of Marinara Sauce (or make your own) - Look for Organic or low sodium, or low sugar. I like Trader Joe's Organic and Muir's Organic Marinara Sauce

Turkey or Sausage Meatballs (or other preferable lean meatball)

EVOO (Extra Virgin Olive Oil)

2-3 Dashes Pepper, Garlic Powder, Red Cayenne Pepper & Turmeric (or other preferred spice other than salt)

Preheat Oven to 375. Cut Spaghetti Squash in half and  place spaghetti side up on baking sheet. Drizzle with EVOO and sprinkle spices on top. Bake 30-40 minutes or until done (spaghetti noodles should be soft). Meanwhile, heat marinara sauce and cook meatballs.

When spaghetti squash is done, scoop out noodles from center with a fork and place on serving dish.. Top with marinara sauce and meatballs and ENJOY.
