1 Package of Chickpea "Pasta" (I like Banza brand)

Veggie Meatballs (I like the Gardein brand, which provided 15g Protein and 4g Fiber with 3 Meatballs)

Couple Handfuls of Veggies. I used : Chopped Red Peppers

Cherry Tomatoes

Zucchini

Bella Mushrooms

Olive Oil (may

Few dashes of pepper, cayenne pepper or your preferred spices

Nutritional Yeast to top with once done

Total Prep Time 15 Minutes:

Cook chickpea shells according to package directions. Meanwhile heat frozen meatballs according to package directions and sauté veggies in skillet with 1 tsp olive oil until veggies are tender, not soggy (to maintain nutrients)

Once shells, meatballs and veggies are done, add to serving bowls, drizzle with olive oil and top with Nutritional Yeast and enjoy a delicious, healthy, hearty bowl of goodness!

This is a favorite in our home as it allows us to enjoy a twist on the traditional pasta and meatballs, but without the meat, gluten/wheat, higher starchy carbs and WITH MORE Protein, Fiber and nutrients!
