Paleo Deviled Eggs

1 Dozen Organic Eggs

2 Avocados

Honey Dijon Mustard (or preferred mustard)

Spices - Pepper, Turmeric, Garlic Salt

Baking Powder

Cook Eggs - Bring pot of warm water to a slight boil. Once water is boiling, turn down to simmer and add spoonful of baking powder (to make eggs easy to peel) then add eggs. Simmer for 12 minutes then cover and set aside for 10 minutes. Drain water and rinse with cold water. Once cooled, peel eggs and cut in half.

Remove egg yolks by gently scooping out with a spoon into a bowl or plate. Add inside of 1 to 1-/2 avocado depeinding or desired creaminess, mustard and spices and mash mixture together. Spoon mixture into individual eggs and sprinkle top with smoked paprika. Refrigerate 20 minutes and serve. May be made the night before.

*By substituting avocado in place of mayonnaise, a processed, saturated fat, dairy product, you not only "clean up" this favorite side dish or snack, but add healthy fats, fiber and protein with the avocado along with a delicious creamy texture!
