Breakfast Quinoa

This is my new favorite breakfast! I was in the mood for something "cereal like" and since I don't eat cereal from a box (starchy, processed chemicals and preservatives made into flakes or bits), I took some pre-cooked Quinoa from the fridge (so it was cold) from the batch I made for the week and added it to yummy Almond Milk, berries and almonds - Wha-La, my new Favorite Cereal was born!

  • 1 Cup or so of Almond Milk (or preferred milk type)
  • 1/2 -3/4 C Cooked Quinoa
  • Handful of Blueberries & Raspberries (or preferred fruit on hand)
  • Handful of Raw Almonds (or preferred nut)
  • Dash of Cinnamon

Pour milk in bowl and add remaining ingredients for fortified "cereal".  A delicious, hearty bowl of the perfect combination of Protein-Carbs-Healthy Fats (the "good carbs and fats")! Only 275 Calories, 8 grams of Fiber, 9 grams of Protein, Vitamins A, C and Calcium and only 4 grams of Natural Sugars from the Fruit!
