Quinoa Tofu Veggie Delight


1 Cup Cooked Quinoa

3-5 Ounces Cubed, Cooked Tofu

Red Peppers


Raw Pumpkin Seeds

Golden Raisins

Nutritional Yeast



Garlic Powder

Olive Oil & Balsamic Vinegar

Cook Quinoa accordingly to package directions (Note that 1 cup dry yields about 4 cups cooked, so you can get multiple meals out of 1 cup of cooked Quinoa!)

I like to add a drizzle of olive oil and cinnamon and nutritional yeast for added benefits and taste to my Quinoa.

If veggies aren't already cut and prepped for the week, cut red bell pepper and zucchini (or substitute your favorite veggies) into chunks and either add raw for crunch or sauté in olive oil 3-4 minutes until slightly cooked. Cut Tofu into cubes, drizzle with olive oil and Turmeric and Garlic Powder and either sautee along with veggies or roast at 425 degrees for 15 minutes.

Once Quinoa is cooked, layer in bowl or dish the Quinoa, cooked Tofu, veggies, pumpkin seeds, golden raisins and top with Nutritional Yeast and drizzle with olive oil and balsamic vinegar and ENJOY! Deliciously delightful bowl of hearty goodness packed with protein, fiber, complex carbs, healthy fats, vitamins & minerals. Excellent for making a batch for multiple meals.
