Spinach Tofu Salad

1-2 Handfuls of Organic Spinach Leaves

3-5 Oz. (Palm Size) Organic Extra Firm Tofu

Handful Chopped Red Pepper

Handful Chopped Cucumber

Few Chunks of Avocado

Few Chopped Sweet Banana Peppers (from jar)

EVOO (Extra Virgin Olive Oil) and Balsamic Vinegar

Cayenne Red Pepper (Or other preferred spice for Tofu)

This delicious, nutrient-rich salad takes only 5 minutes to prepare! Sautee Chopped Tofu in skillet and sprinkle with Cayenne Red Pepper for 4-5 minutes on Medium Heat. Place Spinach in bowl and add remaining ingredients and cooked Tofu. Drizzle with EVOO and Balsamic Vinegar. ENJOY!
