*Optional - For added Protein, top with lean protein choice: Chicken, Salmon, Tofu, Tempeh. If I had Salmon on hand, I would have added!
Dressing - I use either Ken's Steakhouse Raspberry Walnut Vinaigrette or Red Wine Vinegar & Olive Oil Blend
Crisp, Fresh & Delicious!! One of my Favorite Summer Salads. Nutritious, Wholesome Blend of Plant Based Protein (Cashews), "Good Carbs" (Broccoli, Cucs, Carrots & Strawberries), Healthy Fats (Cashews & Olive Oil), Antioxidants, Vitamin C, Folate, Beta Carotene and Fiber.
