Super Salad

Super Power Salad - Clean & Yummy!

Handful or So of Chopped Cucumber

1 Hardboiled Egg - Chopped

1/2 Avocado - chopped

Handful of Slivered Almonds

Few Cherry Tomatoes - cut in 1/2

3-4 Oz. (Handful) of Cooked Diced Chicken (frozen, fresh or canned)

Drizzle EVOO (Extra Virgin Olive Oil

Drizzle Balsamic Vinegar or Balsamic Glaze (pictured)

Dash of Pepper & Other Favored Spices (not Salt)

Mix all ingredients and drizzle with EVOO, Balsamic Glaze and Pepper. Experiment with substitutions and your favorite spices or vegetables. Also delicious with Salmon or Canned Tuna! Tasty Lunch or Dinner Option and perfect to make on the weekend and prepare portions to take to work.
