
Easy Tuna Berry Salad
INGREDIENTS:
1 Packet (or can) of Chunk Light Tuna - I like the Sweet & Spicy version used here, but use whichever you like best
2-3 Handfuls of Fresh Spinach (or other preferred mixed Greens - the darker the better!)
Handful Organic Blueberries
Handful Organic Chopped Strawberries
Handful Pistachios
1/2 Avocado
EVOO and Balsamic Vinegar (or other light Vinaigrette)
Few Dashes of Nutritional Yeast
Add All ingredients to a Bowl or Mix all but Dressing in Container to take to work for lunch.
