Veggie Bean Salad

  INGREDIENTS

1 Can Garbanzo Beans - drained and rinsed

1/2 Cup or So Roasted Red Peppers - (I used jar peppers) or fresh

1/2 Cup Sweet Banana Peppers (I used jar)  or Yellow Peppers

1 Zucchini - Cut into chunks

Handful or 2 of Pumpkin Seeds (Raw or Roasted) - Adds Nice Crunch

Handful of Feta Cheese (Optional)

2-3 Dashes of Pepper

1-2 Dash of Cayenne Red Pepper

2-3 Dashes of Turmeric

2-3 Dashes of Garlic Powder (or other favorite Spice)

Red Wine Vinegar (I used Pomegranate Red Wine Vinegar)

Combine all ingredients and chill for 1 Hour or Overnight for the next day. Tired of lettuce, spinach or leafy green salads? This is a tasty, salad, side dish or even great to pair with blue corn chips and serve as an appetizer.
