Basa-Dinner-fix4-6 oz. filet of Basa (white, very mild, Fish)

 Sweet Potatoe/s

Brussels Sprouts (or other preferred green veggie)

Old Bay Seasoning and/or Lemon Pepper

Cinnamon

EVOO (Extra Virgin Olive Oil)

Dash of Pepper Garlic Powder/Salt

Dash of Cayenne Pepper (Optional)

Preheat oven to 425 degrees. Rinse Basa Fish Filets and pat dry with paper towel. Drizzle EVOO in 9 x 13 baking dish and place Basa filets in dish. Drizzle fish filets w/EVOO & sprinkle Old Bay Seasoning, (and Lemon Pepper or Cayenne Pepper if desired). Bake 20 minutes. Meanwhile, saute Brussels sprouts in pan with EVOO, Garlic Powder/Salt &  Pepper (pictured with Garlic Black Bean Sauce added last 2 minutes) until tender, 7-10 minutes on medium heat.  To add crunch and preserve nutrients, I like veggies to be somewhat crisp and not overcooked/mushy. Rinse Sweet Potatoes, pierce w/fork and microwave 5-7 minutes or until done. Slice into wedges and sprinkle with Cinnamon (optional sprinkle of Sea Salt). Dinner is served! This is an easy (25 minutes total to prep and make), inexpensive ($15 or so for 4 servings), delicious and healthy dinner. Make a little extra for the next day's lunch and also a great way to introduce fish as Basa is a very mild, "non-fishy" fish!
