Roasted Tofu & Veggies

 

1 Block/Pkg Organic Tofu

3-4 Cups Fresh Brussels Sprouts

6-8 Fresh Red, Yellow & Orange Bell Peppers

1/2 Cup Sun Dried Tomatoes

Roasted Garlic

Pepper & Turmeric

EVOO or Coconut Oil

Optional - Goat Cheese

 

Cut Tofu into chunks and press excess water with paper towel. Saute Tofu in pan with EVOO (Extra Virgin Olive Oil) or Coconut Oil on medium heat (10 minutes) and season with pepper, garlic and turmeric (or other preferred spices). May also roast tofu in oven at 425 for 10 minutes. In separate pan, saute Brussels Sprouts, chopped peppers, sun dried tomatoes, and roasted garlic until tender. Add cooked tofu to veggie pan, stir and cook 2 more minutes.  For extra flavor and creaminess, top with sprinkle of goat cheese. Makes 4-6 Servings.
